Happy Fourth of July

I have to start by saying, "Happy Birthday (sister) Erin!". **

**I decided that I need to either say sister-Erin or friend-Erin when I am blogging because I often blog about both of them!

We had a really enjoyable 4th this year. We started the day by planting pumpkins (pictures to come later). Then I went home and was able to talk to Erin on her birthday on Skype. Thank goodness for technology. If my sister was in the Peace Corps 5 years ago I would have had to write her a letter 4 weeks before and send it and hope she got it in time. I still sent her a birthday card...but I was also able to call her and talk to her!

After that we went to Tony and Jessica's (Adam's oldest bro and his wife) for a barbecue. Unfortunately it rained most of the day, but we still had a lot of fun. The rain-go-away dances worked to an extent and the rain stopped by early evening and we were able to walk to and enjoy the fireworks!

It was also fun because Mom and Dad came to the BBQ for the afternoon and Amy did as well! I like being with many of my favorite people all in one place!


These are the treats I brought to the BBQ.

The first one is strawberries (cut in half, with the middle cut out with a melon baller-thank goodness I have one now friend-Erin!), with "On the Boat Fruit Dip" (recipe from friend-Erin's sister), and a blueberry on top. Yummy!

The second one is Red, White, and Blue pasta salad! I found an easy way to dye pasta online and so I dyed the pasta red and blue. The colors were bright and it was also yummy!

On-The-Boat Fruit Dip
Mix 1 8 oz cream cheese brick with 1 jar of Marshmallow Fluff
Delicious!

Pasta Salad
1 box of Rotini
1 bottle Kraft Free Italian Dressing
3-4 T McCormick Salad Supreme Seasoning
variety of veggies (I used carrots, zucchini, broccoli, tomatoes)
1/2 brick Monterrey jack cheese
1/2 brick Colby jack cheese

Cook the pasta as normal.
Rinse with cold water.
Mix in the veggies, seasoning, and 3/4 bottle dressing
Let sit overnight
Right before serving add the rest of the dressing and cheese!

Dying Pasta
Put two cups of water and 1 teaspoon of food coloring in a small pot
Bring to boil
Add 1 cup pasta
cook as normal
drain and rinse with cold water

Voila! Brightly colored pasta!

The kids decided that rain wasn't going to keep them from swimming on a warm 4th of July day! Chasey didn't have swim trunks but that didn't stop him either. Zowie and Zondra had a lot of fun on the new aqua rocker! Good thing Aunt Sue was supervising!


We walked up the fest and enjoyed the fireworks!

Adam and I switched off carrying Chase home. He was on Adam's shoulders and said, "Uncle Adam, I need to sleep". He lifted him down and he promptly fell asleep on his shoulder. He didn't even wake up during the shift changes (my shift was considerably shorter than Adam's, but I wanted to give him a break!).
Last but not least I took some pictures and video of the fireworks so sister-Erin could feel like she was there! I hope you can find some fast Internet and enjoy the show! We missed you!

So stealing your recipes! Yum! Love the pasta dying recipe! The Boat dip also works if you use strawberry cream cheese. Not as patriotic though! :)
