Whip It Up Challenge-Holiday Style

Here it is! My first Whip It Up Challenge!
I decided to use the Holiday theme and make a 4th of July themed salad.

I found the recipe here:

Red, White, and Blue Salad

Ingredients:
1 lb spinach
1 bunch, chopped
1/2 cup slivered almond, toasted
1 pint strawberries
1 cup blueberries
1 cup shredded Monterrey jack cheese
2/3 cup raspberry jelly, warmed
1 tablespoon creole mustard
3 tablespoons balsamic vinegar
3 tablespoons rice vinegar or raspberry vinegar
1 tablespoon raspberry liqueur or white wine
1/2 cup olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Directions:
Rinse the spinach and pat dry.
Tear into pieces and place in salad bowl.
Add the green onions and toss to mix well.
Sprinkle the top with almonds.
Place the strawberries in the center.
Surround the strawberries with blueberries.
Sprinkle the cheese over the top or arrange around the edge of the bowl.
Serve with Raspberry Vinaigrette.

To prepare Raspberry Vinaigrette:
Combine jelly, mustard, vinegars, liqueur, olive oil, salt and pepper in a jar with a tight fitting lid. Cover and shake until blended. Store vinaigrette in the refrigerator.

*My notes*
I used a bag of prewashed spinach (in the bagged salad section)
I could not find "creole mustard" so I used Dijon.
I could not find raspberry vinegar so I used raspberry vinaigrette dressing.
I made just enough for one serving and have the rest sitting in the fridge to eat this week.
I used a Riesling as the white wine and then poured myself a glass to eat with my salad!

1. Was the recipe easy to follow?

Yes, it was easy to follow. The only difficulty was in finding some of the ingredients, but I substituted my own and it seemed fine!

2. Did the dish taste good?

It was very yummy. It is a great light salad for a hot summer day.

3. Would I make it again?

I won't have to make it for a while because that salad dressing is going to last me about 6 weeks. It makes a ton! But I will definitely make it again. It is pretty easy to throw together once you have all of the ingredients.
